Amorgiano Patatato

Patatato (boiled potatoes with goat meat) is a very common dish in Amorgos. It is widely cooked in panigiria (religious festivals) and can be easily found in many taverns around the island. Occasionally it can be prepared with lamb or veal.

Ingredients:
- 2 table spoons of tomato paste
- 1 table spoon of butter
- 1 onion
- 5 or 6 potatoes
- 2 cloves of garlic
- salt
- pepper
- cinnamon
- 1 coffee spoon of olive oil
- 1 glass of white wine
- spices
- 1 kilo of goat meat

Preparation:
Peel the potatoes and cut them into small square pieces. Wash with water and let them dry. Chop the onions and the garlic. Add some oil in the saucepan and when the oil is about to heat, add the wine, and then the chopped onion, garlic and butter. Blend them together until the onion is browned. That is when you add the meat in the saucepan.

Sizzle the meat until it turns brown. Then add the tomato paste mixed with some water. Finally add the potatoes in the saucepan, salt, pepper, cinnamon, spices and water so much as to cover the meat. Let it to boil for about 3 hours until the meat is soft. It is served with red tomato sauce.
